Liège · plant-based cooking · cucina povera
Hi, I’m Fred
I cook in Liège, Belgium, as an amateur, for the people I love. When my partner went vegan, I didn’t want to choose between her and the dishes that make me happy. So I opened a lab: a kitchen, notebooks, lots of trials.
Peasant cooking, made vegan with next to nothing
I look to the cuisines that have always done a lot with very little. Italian cucina povera first: vegetables, stale bread, olive oil, and hours of know-how. But also the childhood dishes from here, and the world’s cuisines born from making do. Many were already almost plant-based: often you only need to swap one ingredient, and understand why.
Why “lab”
Because every recipe is an experiment. I test, I fail, I start again, and I only publish what works in my kitchen. I tell you about the failures too: my eggplant dip was born from a botched baba ganoush.
